Serves 4
- 2 red bell peppers
- 1tsp red pepper flake
- 1 stalk lemongrass
- 2in ginger
- 4 cloves garlic, sliced
- 1 quart stock
- 3tb soy sauce
- 2lb chicken breast, cooked and shredded
- 1 cup cooked rice
- 6 scallions
- 2tb lime juice
- 1/2 cup cilantro
- Cook peppers for 5 minutes. Add 2-5 for 2 minutes. Add 6-8 and simmer for 3 minutes. Add rice and serve with 10-12.
