Ginger chicken and rice soup

Serves 4

  1. 2 red bell peppers
  2. 1tsp red pepper flake
  3. 1 stalk lemongrass
  4. 2in ginger
  5. 4 cloves garlic, sliced
  6. 1 quart stock
  7. 3tb soy sauce
  8. 2lb chicken breast, cooked and shredded
  9. 1 cup cooked rice
  10. 6 scallions
  11. 2tb lime juice
  12. 1/2 cup cilantro
  • Cook peppers for 5 minutes. Add 2-5 for 2 minutes. Add 6-8 and simmer for 3 minutes. Add rice and serve with 10-12.
