Flounder en papillote with shaved veggies

Serves 4

  1. 1tb olive oil
  2. 1tb white wine
  3. 1tb white wine vinegar
  4. 2oz asparagus, shaved
  5. 2oz radishes, shaved
  6. 4 4-6oz flounder fillets
  7. 1 lemon, sliced
  8. 3tb butter in 8 slices
  • Mix 1-5 and set aside.
  • Top parchment with 6-8, wrap and roast at 400 degrees for 12 minutes.
  • Rest 3 minutes, cut open, remove lemon slices and top with veggies.
