Coffee cream puffs

Makes 25-30

  1. 2-1/2 cups milk
  2. 1 vanilla bean
  3. 4 yolks
  4. 15g cornstarch
  5. 80g + 1/2tb sugar
  6. 150g flour, sifted
  7. 9tb butter
  8. 4tsp instant coffee
  9. 1/2 cup water
  10. Pinch of salt
  11. 4 eggs
  • Bring 2 cups milk and vanilla to a boil. Meanwhile, mix 3-4 with 80g sugar and 30g flour. Temper, bring heat down to low and whisk in mixture until thickened, about 1-2 minutes. Take off-heat, mix in 2tb butter and instant coffee and let cool. Cover surface and chill for 4 hours.
  • Bring 9-10 and remaining milk, butter and sugar to a boil. Take off-heat and dump in remaining flour. Return to heat and stir in for 1 minute. Take off-heat and mix in eggs 1 at a time.
  • Using a 1/2in plain tip, or a ziplock bag with the corner cut off, pipe golfball-sized mounds 1in apart. Smooth tops gently with the back of a spoon dipped in water. Bake a 400 degrees for 25 minutes. Let cool completely before piping in cream.
