Sesame pork and eggplant stir-fry

Serves 4

  1. 1lb pork tenderloin, halved and cut into 1/4in slices
  2. 5tb + 1tsp sesame oil
  3. 7tb soy sauce
  4. 1tb cornstarch
  5. 1lb eggplant, peeled and cut into 3/4in pieces
  6. 1 red onion, sliced
  7. 2tsp ginger
  8. 5 cloves garlic
  9. 2 scallions
  10. 2tb fish sauce
  11. 1 cup basil, chopped
  12. 2tsp sesame seeds
  • Mix pork with 2tb sesame oil, 1tb soy sauce and 1/2tb cornstarch. Brown for 2 minutes, stirring halfway, in a 12in skillet in 2 batches. Set aside.
  • Cook eggplant for 3 minutes and set aside. Cook onion for 3 minutes, add back eggplant and continue cooking for 2 minutes. Clear center and cook 7-9 and 1tsp sesame oil for 1 minute. Add remaining sesame oil, soy sauce, corn starch and fish sauce and cook for 2 minutes. Add pork and 11-12. Serve with rice.
