Shellfish roast

Serves 2

  1. 12 clams
  2. 12 mussels
  3. 12 shell-on shrimp
  4. 2tb oil
  5. 2 cloves garlic
  6. 1 shallot
  7. 4tb white wine
  8. 1 sprig thyme
  9. 1 sprig tarragon
  10. 4tb butter, chilled and cut into 1/2tb pieces
  • Preheat skillet in a 450 degree oven. Toss 1-4 and roast for 8-10 minutes.
  • Place on stove on medium heat, clear space in middle and cook 5-6 for 1 minute. Add 7-9 and whisk in butter. Toss, divide and serve.
