Tiramisu Cupcakes

Makes 18

  1. 4tb milk
  2. 1 vanilla bean, split and seeds seperated
  3. 4tb butter
  4. 3 eggs
  5. 3 yolks
  6. 1-1/4 cup sugar
  7. 1-1/4 cup cake flour
  8. 3/4tsp baking powder
  9. 1/2tsp salt
  10. 6tb coffee or espresso
  11. 1oz marsala
  12. 8oz mascarpone, at room temperature
  13. 1/2 cup powdered sugar, sifted
  14. 1 cup cream, whipped to stiff peaks
  15. Cocoa powder
  • Bring 1-3 to a simmer, take off heat, cover and steep for 15 minutes. Discard vanilla pod.
  • Beat 4-5 and 1 cup sugar. Whisk over a double boiler until combined, about 6 minutes. Beat to ribbon stage.
  • Fold in 7-9 in 3 additions. Fold in vanilla mixture. Bake at 325 for 20 minutes.
  • Combine remaining 4tb sugar with 10-11 and drizzle over cupcakes. Mix 12-14, top cupcakes and refrigerate overnight. Finish with cocoa powder.
