Skillet lemon chicken

Serves 4

  1. 3lb bone-in chicken pieces
  2. 1/2 cup salt
  3. 2 quarts water
  4. 2tb butter
  5. 1 shallot
  6. 1 clove garlic
  7. 4tsp flour
  8. 1 cup chicken broth
  9. 4tb lemon juice
  10. 4tsp lemon zest
  11. 1tb fresh parsley
  12. 1tsp fresh oregano
  • Brine 1-3 for 30-60 minutes. Brown skin-side down in a 12in skillet for 8-10 minutes. Set aside breasts, flip remaining pieces and brown for 3-5  minutes. Set aside and blot fat out of skillet.
  • Cook 4-6 for 1 minute. Add flour for 1 minute. Deglaze with 8-9 and simmer until thickened about 2-3 minutes. Add 1tb lemon zest and chicken skin-side up and bake at 475 degrees for 10-12 minutes.
  • Combine remaining 1tsp lemon zest with 11-12. Add half of mixture to sauce and top chicken with the remaining half. Serve.
