Chorizo meatballs

Serves 4-6

  1. 1 onion
  2. 5 cloves garlic
  3. 1-2 serranos
  4. 3/4tsp chipotle powder
  5. 12oz chorizo
  6. 8oz ground pork
  7. 1/2 cup bread crumbs
  8. 1 egg
  9. Flour for dredging
  • Brown onion for 10 minutes. Add 2-4 for 1 minute. Take off-heat and let cool.
  • Mix with 5-8 and form balls. Dredge in flour. Brown on all sides and transfer to a 350 degree oven for 20 minutes.
