Almond panna cotta

Serves 6

  1. 1 cup slivered almonds
  2. 3-1/2 cups whole milk
  3. 4 large strips orange zest
  4. 3 cinnamon sticks
  5. 3tb sugar
  6. Pinch of salt
  7. 2tsp gelatin
  • Toast almonds at 375 degrees for 15 minutes. Set aside.
  • Bring 2-6 to a boil. Take off-heat, add almonds, cover and infuse for 2 hours.
  • Strain mixture and add enough milk to make 3 cups if necessary. Add 1/2 cup of mixture to a small pan, add gelatin and rest for 10 minutes. Bring heat to medium and whisk to combine. Whisk into remaining milk mixture, divide into 4oz portions, pop bubbles that rise to surface and chill 4 hours-1 day.
