Smoked gouda and bacon grilled cheese

Serves 2

  1. 4 strips bacon
  2. 4 slices bread
  3. 1/2 cup onion jam
  4. 6oz smoked gouda
  5. 3tb truffle butter
  • Cook bacon and set aside. Spread onion jam on 2 slices of bread, top with 1.5oz each gouda, top with 2 slices bacon and finish with remaining 3oz gouda. Spread other 2 slices of bread on one side with butter and finish sandwich buttered side facing up.
  • Heat pan on medium, place sandwich unbuttered side down, lower heat to low and cook for 3-4 minutes. Flip and cook for 3-4 minutes. Serve.
