Buttermilk lemon cake for 2

Serves 2

  1. 2.3oz sugar
  2. 2tsp lemon zest
  3. 3tb butter
  4. 1 egg
  5. 3tb + 1tsp buttermilk
  6. 2tb lemon juice
  7. 1/4tsp vanilla
  8. 2.6oz cake flour
  9. 1/4tsp baking powder
  10. 1/8tsp baking soda
  11. 1/8tsp salt
  12. 3oz powdered sugar
  • Mix 1-2 and set aside 1tb. Beat remaining into butter until smooth, about 2 minutes. Beat in egg.
  • Combine 3tb buttermilk, 1tb lemon juice and vanilla. Separately, combine 8-11. Beat in mixtures alternately in 4 additions. Bake at 325 degrees for 25-28 minutes in a 7-1/4in x 5-1/4in pan and cool for 10 minutes.
  • Mix remaining 1tsp buttermilk and 1tb lemon juice with powdered sugar and spread on cake. Top with reserved 1tb lemon sugar.
