Steak and rajas tacos

Serves 6

  1. 2lb skirt or flank steak
  2. 4 onions, 1 chopped and 3 sliced into rounds
  3. 6tb lime juice
  4. 3 cloves garlic
  5. 1/2tsp cumin
  6. 1tsp salt
  7. 1.5lb poblanos, roasted, skinned and cut into strips
  8. 18 6in torillas
  • Cook steak to medium rare and set aside. Poke thoroughly with a fork and marinate in chopped onion and 3-6 for 5-10 minutes.
  • Meanwhile, char onion rounds for about 5 minutes per side. Slice steak, combine with onions and poblanos and serve in tortillas.
