- 2lb skirt or flank steak
- 4 onions, 1 chopped and 3 sliced into rounds
- 6tb lime juice
- 3 cloves garlic
- 1/2tsp cumin
- 1tsp salt
- 1.5lb poblanos, roasted, skinned and cut into strips
- 18 6in torillas
- Cook steak to medium rare and set aside. Poke thoroughly with a fork and marinate in chopped onion and 3-6 for 5-10 minutes.
- Meanwhile, char onion rounds for about 5 minutes per side. Slice steak, combine with onions and poblanos and serve in tortillas.
