- 4oz chorizo, casing removed
- 1 poblano, roasted and sliced
- Half an onion, sliced
- 8oz queso Oaxaca in 1/2in pieces
- Brown chorizo in a 10in skillet for 1 minute. Add 2-3 for 5-7 minutes. Remove and drain.
- Add cheese and bake at 375 degrees for 8-10 minutes. Top with drained mixture.
