Mexican cheese dip

Serves 6-8

  1. 4oz chorizo, casing removed
  2. 1 poblano, roasted and sliced
  3. Half an onion, sliced
  4. 8oz queso Oaxaca in 1/2in pieces
  • Brown chorizo in a 10in skillet for 1 minute. Add 2-3 for 5-7 minutes. Remove and drain.
  • Add cheese and bake at 375 degrees for 8-10 minutes. Top with drained mixture.
