- 8 5-7oz bone-in thighs
- 1.5lb yukon potatoes in 1/2in pieces
- 4oz chorizo
- 8oz spinach
- Smoked paprika to taste
- Brown thighs skin side down for 7 minutes and finish in a 375 degree oven for 15 minutes.
- Cover potatoes and brown for 5 minutes, stirring occasionally. Uncover and cook chorizo for 5 minutes. Wilt spinach, about 2 minutes. Add paprika and serve with thighs.
