Chicken thighs with chorizo and potatoes

Serves 4

  1. 8 5-7oz bone-in thighs
  2. 1.5lb yukon potatoes in 1/2in pieces
  3. 4oz chorizo
  4. 8oz spinach
  5. Smoked paprika to taste
  • Brown thighs skin side down for 7 minutes and finish in a 375 degree oven for 15 minutes.
  • Cover potatoes and brown for 5 minutes, stirring occasionally. Uncover and cook chorizo for 5 minutes. Wilt spinach, about 2 minutes. Add paprika and serve with thighs.
