Black pepper beef stir-fry

Serves 4

  1. 1lb flank steak in 2in x 1/4in slices
  2. 1/4tsp baking soda
  3. 5tb water
  4. 3tb soy sauce
  5. 3tb sherry
  6. 1tb cornstarch
  7. 2-1/2tsp sugar
  8. 3tb oil
  9. 6 scallions, green parts in 2in pieces and white parts sliced
  10. 1 red bell pepper
  11. 1 green bell pepper
  12. 3 cloves garlic
  13. 1tb ginger
  14. 1tb oyster sauce
  15. 2tsp rice wine vinegar
  16. 1/2tb sesame oil
  17. 2tsp coarse ground pepper
  • Toss steak with 1tb water and baking soda and rest 5 minutes. Marinate in 1tb soy, 1tb sherry, 1/2tb cornstarch and 1/2tsp sugar for 15-30 minutes.
  • Heat 1tb oil in a 12in pan and brown beef in 2 batches, about 2 minutes each. Set aside.
  • Add 1tb oil and cook peppers and scallion greens about 4 minutes. Set aside.
  • Add remaining 1tb oil and cook scallion whites, ginger and garlic about 2 minutes. Add back cooked steak and veggies along with remaining 3-6 and 14-17 and heat through about 30 seconds.
