Bacon roast chicken with balsamic-honey glaze and root veggies

Serves 4-6

  1. 1 slice bacon
  2. 5-6lb chicken OR 2 3-3.5lb chickens
  3. 2.5-3lb root veggies in 1.5-2in pieces OR 1in pieces if using smaller chickens
  4. 2tb oil
  5. 1tb herbs de provence
  6. 1 sliced onion
  7. 1.5tb butter
  8. 1tsp honey
  9. 1/2tb balsamic vinegar
  • Place bacon under skin covering breast and tie legs. Toss 3-5. Mix 7-9.
  • If using large chicken, use a 12in x 14in pan, or if using smaller chickens use a 13in x 16in pan. Layer onion on bottom and add chicken and veggies. Place in a 375 degree oven and apply glaze every 20 minutes. Roast for 80-100 minutes for larger chicken or 60-70 minutes for smaller chickens.
