Bacon-red cabbage salad

Serves 4-6

  1. 1lb bacon
  2. 4tb oil
  3. 5tb balsamic vinegar
  4. 1 small red cabbage
  • Render and brown bacon. Set aside and pour off most of the fat; reserve for other use.
  • Add 2-3 and bring to a simmer. Toss with bacon and cabbage. Can be served hot or at room temperature.
