Sausage chili

Serves 6-8

  1. 2 onions
  2. 2 red bell peppers
  3. 4tb chili powder
  4. 3tb oil
  5. 5 cloves garlic
  6. 1tb cumin
  7. 1tb dry oregano
  8. 3 cups broth
  9. 2-1/2 cups water
  10. 1lb navy beans
  11. 1lb kielbasa
  12. 8oz andouille sausage
  13. 2tb soy sauce
  14. 1tb brown sugar
  15. 1tb chili in adobo
  16. 1tsp liquid smoke
  17. 2 bay leaves
  18. 3 scallions
  • Microwave 1-7 covered for 5 minutes, stirring occasionally. Place in slow cooker with 8-17 and cook on low for 9-11 hours or on high for 6-8 hours. Add scallions and serve.

Thin crust white pizza

Serves 4

  1. 1/2tsp dry yeast
  2. 1tsp sugar
  3. 1 cup water
  4. 500g bread flour
  5. 2tb oil
  6. 5oz mozzarella
  7. 5oz taleggio
  8. Oregano to taste
  9. Extra-virgin oil to taste
  • Mix 1-2 with 4tb water and 40g flour and rest 20 minutes. Mix in remaining flour and water with oil. Knead 10 minutes and rest 2 hours.
  • Stretch to fit a parchment-lined baking sheet. Top with cheese, oregano and oil in that order and bake at 425 degrees for 20 minutes.

Creamy smokey chicken pizza

Makes 16in pizza

  1. 8oz boneless chicken breast
  2. 2tb liquid smoke
  3. 1/2tb garlic powder
  4. 1/2tb oil
  5. 1/2 red onion
  6. 1tb sugar
  7. 1tb red wine vinegar
  8. 8oz cream cheese
  9. 1 jalapeno
  10. 1/2 cup pizza sauce
  • Marinate 1-4 for 1-12 hours. Roast at 400 degrees for 15 minutes. Meanwhile, heat together 6-7 and pickle onion.
  • Spread cream cheese on pizza dough. Top with jalapeno, chicken and onion. Top with pizza sauce. Bake at 500 degrees for 15 minutes.
