Duck fat potato galette

Serves 6

  1. 1/2tsp caraway seeds, toasted and crushed
  2. 2lb yukon potatoes in 1/8in slices
  3. 2tb duck fat
  4. 4tb butter
  5. 1 sweet onion, sliced
  • Toss 1-3 with 2tb butter. Toss onion with 1tb butter. Alternate 4 layers potato and 3 layers onion in a 9in mold and bake at 425 for 45 minutes. Brush with remaining 1tb butter and bake for 5-10 more minutes.
