Buttermilk cinnamon rolls

Makes 12

  1. 4 cups flour
  2. 1/3 cup sugar
  3. 1/4oz instant yeast
  4. 1/2tsp salt
  5. 3 eggs
  6. 3/4 cup buttermilk
  7. 18tb butter
  8. 1 cup brown sugar
  9. 1-2tb cinnamon
  10. 3oz cream cheese
  11. 1/2tb vanilla extract
  12. 8oz powdered sugar
  • Whisk 1-4. Melt 6tb butter and microwave buttermilk for 45 seconds. Add to dry ingredients along with eggs and form dough. Knead for 15-18 minutes and let rise for 2-2.5 hours. Leave 8tb butter out to soften.
  • Deflate and knead dough briefly. Roll out to a rough 16 x 12 rectangle and spread softened butter, leaving 3/4in edges. Top with 8-9, roll into a log, stretch out to 18in and cut into 12 1.5in pieces. Rolls can be refrigerated up to 16 hours at this point. Cover and let rise 1-1.5 hours. Leave remaining 4tb butter and cream cheese out to soften.
  • Bake rolls at 350 degrees for 20-25 minutes until just lightly browned. Meanwhile, beat softened butter and cream cheese together with vanilla extract until combined. Beat in powdered sugar. Spread on rolls immediately after they come out of the oven.
