Mahogany chicken

Serves 8

  1. 1-1/2 cup water
  2. 1 cup soy sauce
  3. 4tb sherry
  4. 2tb sugar
  5. 2tb molasses
  6. 1tb distilled white vinegar
  7. 8 5-7oz bone-in thighs
  8. 2in ginger, halved and smashed
  9. 6 garlic cloves, smashed
  10. 1tb cornstarch
  • Bring 1 cup water and 2-6 to a simmer in a 12in skillet. Add chicken skin-side down along with 8-9 and simmer for 5 minutes.
  •  Simmer in a 300 degree oven for 30 minutes. Flip and cook for 20-30 minutes or until internal temperature is 195.
  • Remove chicken and strain liquid. Discard fat and all but 1 cup liquid. Bring to a simmer and add remaining 1/2 cup water mixed with cornstarch and simmer for 1 minute. Meanwhile, broil thighs in lower-middle of oven for 4 minutes. Serve.
