Feta and herb zucchini fritters

Makes 12

  1. 1.5lb shredded zucchini
  2. 1/2tb salt
  3. 6tb cornstarch
  4. 6oz feta
  5. 1 egg
  6. 2tb mint
  7. 2tb dill
  8. 2 cloves garlic
  9. 1tsp pepper
  10. 4tb oil
  • Mix 1-2 and drain 10 minutes. Mix with remaining ingredients. Heat half of oil in a 12in skillet, add 6 4tb portions flattened 2.5in thick and brown for 4 minutes on each side. Set aside, repeat and serve.
