Slow-cooker dirty rice

Serves 2

  1. 4oz kielbasa sausage in 1/2in pieces
  2. 1 onion
  3. 1 red bell pepper in 1/2in pieces
  4. 2 cloves garlic
  5. 2tsp chili powder
  6. 1/2tsp thyme
  7. 2 cups cooked rice
  8. 1lb chicken thighs
  9. 2 scallions
  • In an uncovered bowl, microwave 1-6 for 5 minutes, stirring occasionally. Add to slow cooker with 7-8 and cook on low for for 4-5 hours. Shred chicken and mix in scallions.
