Russian Caravan & Chinese 5-spice brine for chicken

For 4lb chicken

  1. 1/3 cup russian caravan tea
  2. 8 cups water
  3. 5 cloves
  4. 2 cinnamon sticks
  5. 2 star anise
  6. 1tsp peppercorns
  7. 3 slices ginger
  8. 1tsp fennel seed
  9. Zest and juice of 1 orange
  10. 1/2 cup kosher salt
  11. 4tb brown sugar
  • Steep 1-8 and zest for 20 minutes. Mix in remaining ingredients and brine chicken in  a 1-gallon bag for 12-24 hours. Air-dry chicken on a rack in the fridge overnight before cooking.
