Fancy grilled cheese

Serves 2

  1. 3.5oz room-temperature cheddar in 12 pieces
  2. 1oz brie, rind discarded
  3. 1tb white wine
  4. 2tsp shallot
  5. 1.5tb butter
  6. 1/2tsp mustard
  7. 4 slices bread
  • Process 1-3 for 20-30 seconds. Add shallot and pulse 3-5 times.
  • Mix 5-6 and spread on 1 side of all bread slices. Divide cheese on half the slices on the unbuttered side.
  • Heat a 12in pan on medium heat, lower to low and cook the sandwiches for 6-9 minutes per side. Rest 2 minutes.

Variation: Use rye bread and sub gruyere for cheddar and chives for shallot.
