- 3.5oz room-temperature cheddar in 12 pieces
- 1oz brie, rind discarded
- 1tb white wine
- 2tsp shallot
- 1.5tb butter
- 1/2tsp mustard
- 4 slices bread
- Process 1-3 for 20-30 seconds. Add shallot and pulse 3-5 times.
- Mix 5-6 and spread on 1 side of all bread slices. Divide cheese on half the slices on the unbuttered side.
- Heat a 12in pan on medium heat, lower to low and cook the sandwiches for 6-9 minutes per side. Rest 2 minutes.
Variation: Use rye bread and sub gruyere for cheddar and chives for shallot.
