Chicken Tabbouleh

Serves 4

  1. 3/4 cup fine bulgur
  2. 1/2 cup lemon juice
  3. 1-3/4 cup chicken
  4. 1 medium cucumber
  5. 4 radishes, sliced
  6. 1-1/4 cup mint
  7. 3/4 cup parsley
  8. 3-4 scallions
  9. 1/3 cup olive oil
  • Rest 1-2 for 45 minutes. Mix in remaining ingredients.
