Shrimp scampi

Serves 2

  1. 1.5tb salt
  2. 1tb sugar
  3. 12 shell-on jumbo 16-20 count shrimp, peeled and deveined
  4. 1/2 cup dry white wine
  5. 2 sprigs thyme
  6. 4 cloves garlic, sliced
  7. 1/4tsp red pepper flakes
  8. 1/8tsp pepper
  9. 1.5tb lemon juice
  10. 1/2tsp cornstrach
  11. 2tb butter
  12. 1/2tb parsley
  • Brine 1-3 in 2 cups water for 15  minutes. Meanwhile, brown shells in a 10in skillet for 2-4 minutes. Add 4-5 and simmer for about 4 minutes. Drain and reserve liquid, discarding shells and thyme.
  • Cook 6-8 on low heat for 3-5 minutes. Simmer reserved liquid, add shrimp and cover until cooked through, about 5-7 minutes. Set shrimp aside.
  • Add 9-10 for 1 minute. Whisk in 11-12. Add back shrimp and serve.
