Creamy shiitake-ginger sauce

Serves 4

  1. 1lb shiitake mushrooms, stemmed and sliced
  2. 1tb oil
  3. 3tb ginger
  4. 4tb rice wine or sherry
  5. 1 cup chicken or vegetable broth
  6. 4tb cream
  7. 2tb butter
  • Brown 1-2 for 5 minutes. Add ginger for 30 seconds. Simmer wine for 1 minute. Simmer 5-6 for 6 minutes. Whisk in butter.
