- 10 guajillo peppers, stemmed and deseeded
- 1tsp peppercorns
- 1tsp coriander seeds
- 1in stick of mexican cinnamon
- 1tb oregano
- 1 bay leaf
- 1 clove
- 1 clove garlic
- 4tb cider vinegar
- 1/2tb salt
- 2tb sugar
- 1lb ground pork
- Preheat cast iron skillet for 5 minutes and briefly toast guajillos. Soak in water for 30 minutes.
- Toast 1-6 for 15 seconds. Grind and set aside.
- Toast garlic for 6 minutes and blend with guajillos and 9-11. Mix into pork with spices.
