Red chorizo

Makes 20oz

  1. 10 guajillo peppers, stemmed and deseeded
  2. 1tsp peppercorns
  3. 1tsp coriander seeds
  4. 1in stick of mexican cinnamon
  5. 1tb oregano
  6. 1 bay leaf
  7. 1 clove
  8. 1 clove garlic
  9. 4tb cider vinegar
  10. 1/2tb salt
  11. 2tb sugar
  12. 1lb ground pork
  • Preheat cast iron skillet for 5 minutes and briefly toast guajillos. Soak in water for 30 minutes.
  • Toast 1-6 for 15 seconds. Grind and set aside.
  • Toast garlic for 6 minutes and blend with guajillos and 9-11. Mix into pork with spices.
