Makes 12 tacos
- 1 peeled and diced russet potato
- 1tb lard
- 20oz red chorizo
- 12 tortillas
- 1 onion, diced
- Salsa de arbol
- 15 sprigs cilantro, chopped
- 2 limes, each cut into 6 wedges
- Cover potato in cold, salted water and bring to a boil. Drain immediately.
- Heat lard on medium heat and cook chorizo for 15 minutes. Add potato and cook for 10 minutes.
- Divide mixture evenly between tortillas and top with 5-7. Squeeze lime wedges over tacos.
