Potato and chorizo tacos

Makes 12 tacos

  1. 1 peeled and diced russet potato
  2. 1tb lard
  3. 20oz red chorizo
  4. 12 tortillas
  5. 1 onion, diced
  6. Salsa de arbol
  7. 15 sprigs cilantro, chopped
  8. 2 limes, each cut into 6 wedges
  • Cover potato in cold, salted water and bring to a boil. Drain immediately.
  • Heat lard on medium heat and cook chorizo for 15 minutes. Add potato and cook for 10 minutes.
  • Divide mixture evenly between tortillas and top with 5-7. Squeeze lime wedges over tacos.
