Serrano-garlic salsa

Makes 1 cup

  1. 15 serrano chilis
  2. 3 cloves unpeeled garlic
  3. Salt
  4. Half an onion, chopped
  5. 5tb water
  • Toast 1-2 for 6 minutes. Skin garlic, but not chilis.
  • Crush garlic and a pinch of salt. Crush onion. Crush chilis and water. Add salt to taste. Keeps 3 days.
