Habenero salsa

Makes 1 cup

  1. 1/2tsp dried oregano
  2. 10 habeneros
  3. Half an onion, thinly sliced
  4. 1tsp salt
  5. 1tb sugar
  6. Zest and juice of 1 orange
  7. Zest and juice of 1 lime
  8. 1tb cider vinegar
  • Preheat cast-iron skillet for 5 minutes. Toast oregano for 15 seconds and set aside. Toast habeneros for 15 minutes, turning occasionally, and set aside. Toast onion for 6 minutes and set aside.
  • Crush oregano and onion with 4-5. Crush habeneros with 6-7. Add vinegar. Keeps 3 days.
