- 4tb oil
- 3tb butter
- 4 baby leeks
- 3 videla onions
- 5 shallots
- 1tb sugar
- 1tb green pepper
- 2 bunches green garlic OR 6 cloves garlic
- 8oz ramps OR 1lb scallions
- Interior of day old 1lb sourdough in 1in cubes
- 10 cups broth
- 2 bay leaves
- Cook down 1-7 on med-low heat for 50 minutes.
- Cook garlic on medium heat for 5 minutes. Cook 9-10 for 2-3 minutes and rest off-heat for 30 minutes.
- Simmer 11-12 for 30 minutes. Finish with a drizzle of good olive oil.
