- 2 slices of bacon
- 1lb quartered crimini mushrooms
- 1 shallot
- 1/3 cup Shiraz
- 1/3 cup broth
- 1/2tsp dried thyme
- 1tb butter
- 1tb parsley
- Brown and render bacon about 5 minutes. Set aside.
- Brown mushrooms 8 minutes. Add shallot and cook 2 minutes.
- Add 4-6 and simmer until reduced to 4tb, about 3 minutes. Add 7-8.
