Asian poached salmon two ways

Serves 4

  1. 4 6oz salmon filets
  2. 1 cup soy sauce OR 1 can coconut milk
  3. 3 slices ginger OR 2 stalks lemongrass in 3in pieces
  4. 1 scallion OR 1tb curry powder + 2tsp salt
  5. Sesame oil OR cilantro
  • Barely cover fish with water and add 2-4. Bring to a boil and simmer for 1 minute. Turn off heat and rest in liquid for 10 minutes. Top with 5.
