Mixed fish coconut-green curry

Serves 4

  1. 1 onion
  2. 1in piece of ginger
  3. 2 lemongrass stalks, crushed and outer leaves discarded
  4. 3 kaffir lime leaves
  5. Deseeded bird-eye chili
  6. 1tb green curry paste
  7. 1tb soy
  8. 1 cup coconut milk
  9. 1/2 cup water
  10. 6oz cod
  11. 6oz salmon
  12. 8oz monkfish
  13. 2tb lime
  14. 2tb cilantro
  • Cook onion for 2 minutes. Add 2-5 for 3 minutes. Add 6-9 and simmer for 5 minutes.
  • Cube fish and add. Simmer for 12-15 minutes. Add 13-14.
