Tandoori chicken 2

Serves 2

  1. 2tb oil
  2. 1tb fresh ginger
  3. .5tb garam masala
  4. 1tsp cumin
  5. 1tsp chili powder
  6. 4 garlic cloves
  7. 2tb lime juice
  8. 1 cup yogurt
  9. 2 halved bone-in skinless chicken breasts scored in crosshatch pattern
  10. 1tsp salt
  11. 1tb cilantro
  12. 1tb mint
  • Heat oil and toast 2-5 and 3 of the garlic cloves. Mix 1tb of the mixture in 1tb lime juice and 1/2 cup of yogurt. Add salt and remaining 1tb lime to remaining spice mixture.
  • Coat chicken in spice mixture skinned side down and rest at room temperature for 30 minutes. Dip in yogurt mixture and roast skinned side down at 325 for 15-25 minutes or until internal temperature is 120. Flip and broil 6in away from heating element 8-15 minutes or until internal temperature is 160.
  • Mix remaining 1/2 cup yogurt with remaining garlic clove and 11-12 and serve with chicken.
