Scallop salad with bacon

Serves 4

  1. 6 slices bacon
  2. Half a red onion, thinly sliced
  3. 1tsp sugar
  4. 2tb whole mustard
  5. 4tb cider vinegar
  6. 1.5lb large sea scallips
  7. 8oz baby spinach
  • Cook bacon until crisped and rendered. Set aside and leave 4tb of fat in pan.
  • Cook 2-3 about 3 minutes. Add 4-5 and set aside.
  • Sear scallops, about 1-2 minutes a side. Chop bacon and toss with spinach and onion/vinaigrette mixture. Divide and arrange scallops on top.
