Serves 4
- 6 slices bacon
- Half a red onion, thinly sliced
- 1tsp sugar
- 2tb whole mustard
- 4tb cider vinegar
- 1.5lb large sea scallips
- 8oz baby spinach
- Cook bacon until crisped and rendered. Set aside and leave 4tb of fat in pan.
- Cook 2-3 about 3 minutes. Add 4-5 and set aside.
- Sear scallops, about 1-2 minutes a side. Chop bacon and toss with spinach and onion/vinaigrette mixture. Divide and arrange scallops on top.
