Creamy lobster fennel fettuccine

Serves 8-10

  1. 3tb oil
  2. 1 onion
  3. 1 fennel bulb, chopped
  4. 1tb fresh thyme
  5. 3 cloves garlic
  6. 1/4tsp cayenne
  7. 3/4 cup sherry
  8. 4 cups chicken broth
  9. 4 cups water
  10. 2 cups heavy cream
  11. 2lb fettuccine
  12. 2lb cooked lobster in 1/3in pieces
  13. 3tb fresh tarragon
  14. 1tb lemon juice
  • Cook 1-3 for 5 minutes. Add 4-6 for 1 minute. Cook sherry until evaporated, about 5 minutes.
  • Add 8-11. Simmer on medium-high while stirring 12-15 minutes.
  • Add 12-13 on low for 2-3 minutes. Add lemon juice.
