Bowties with pancetta and artichokes

Serves 4-6

  1. 2tb butter
  2. 6oz sliced pancetta in 1/4in strips
  3. 2 shallots
  4. 18oz frozen artichoke hearts
  5. 3 cloves garlic
  6. 2tsp flour
  7. 1 cup white wine
  8. 1 cup chicken stock
  9. 1 cup heavy cream
  10. zest + juice of 1 lemon
  11. 2tb tarragon
  12. 1lb farfelle
  13. 1oz parmesan
  14. 4oz spinach
  • Brown pancetta in 1tb butter about 8 minutes. Set aside.
  • Cook shallots in remaining 1tb butter about 3 minutes. Brown artichokes about 6 minutes. Add garlic for 1 minute. Add flour for 1 minute. Add and simmer 7-9 for about 15-20 minutes. Add in 10-11.
  • Mix in pasta with pancetta and 13-14 until spinach is slightly wilted.
