- 2tb + 1tsp oil
- 4 slivered garlic cloves
- 30oz curly spinach
- 1/2tsp lemon zest
- 1/4tsp salt
- Pinch of red pepper flakes
- Dash of lemon juice
- Cook garlic in 2tb oil for 3 minutes. Shake pan instead of stirring garlic.
- Add spinach a handful at a time. Add 4-6 for 2 minutes.
- Let drain in colander and use tongs to squeeze out liquid.
- Add back to pot with remaining 1tsp oil and lemon juice. Add salt and pepper to taste.
