Mulled wine

Serves 4

  1. 1 1.5in cinnamon stick
  2. 5 cloves
  3. 5 peppercorns
  4. 1/2tsp allspice berries
  5. 1 bottle full-bodied red wine
  6. 2 2in strips orange zest
  7. 1/2 cup sugar
  8. 2tb brandy
  • In empty pot, toast 1-4. Bring 5-7 to a simmer (do not boil at any point)for 1 hour partially covered.
  • Add brandy and taste. Add up to 2tb more sugar and 2tb more brandy as needed.
