Chicken adobe and rice

Serves 8

  1. 8 bone-in chicken thighs
  2. 3/4 cup rice wine vinegar
  3. 4tb soy sauce
  4. 2 cloves garlic
  5. 1/2tsp pepper
  6. 2 bay leaves
  7. 3/4 chicken stock
  8. 2 medium potatoes
  9. 4 carrots
  10. 2tsp cornstarch
  11. 2 cups uncooked white rice.
  • Marinate 1-6 for about 30 minutes.
  • Sear chicken and simmer in marinade and 7-9 for about 45 minutes.
  • Meanwhile, bring 4 cups of water to a boil. Add rice, bring down to a simmer and cook covered for about 20 minutes.
  • Remove bay leaves. Mix cornstarch with 1tb water and add to sauce. Serve chicken/sauce over rice.
