Oven fries

Serves 4-6

  1. 3lb russet potatoes
  2. 4tb oil
  3. 2tsp salt
  4. Fresh herbs to taste
  • Cut russets into 1/3in slices. Cut slices again into 1/3in sticks.
  • Soak in lightly salted water for 1 hour.
  • Drain, dry, toss with 2-4 and bake at 400 for 40-50 minutes. Stir often and rotate halfway through cooking.
