Cast-iron chicken fajitas

Serves 4

  1. 1.5 boneless/skinless chicken breasts pounded 1/2in thick
  2. 3tb lime juice
  3. 6 garlic cloves
  4. 1.5tsp paprika
  5. 1tsp sugar
  6. 1tsp salt
  7. 1/2tsp cumin
  8. 1/2tsp pepper
  9. 1/4tsp cayanne
  10. 1lb poblano peppers
  11. 1 onion
  12. 1/4tsp thyme
  13. 1/4tsp oregano
  14. 1/2cup cream
  • Marinate chicken, 2tb lime juice, 4 cloves of garlic and 4-9 for 30-60 minutes.
  • Roast poblanos, skin and cut into strips. Cook in skillet on medium heat with 11-13 and remaining 2 cloves garlic for 3 minutes.
  • Place with cream and remaining 1tb lime juice in separate pan and place in a preheated 200 degree oven.
  • Sear chicken on one side for 4 minutes, flip and place skillet in oven for 7-10 minutes.
