Spring orzo

Serves 4

  1. 2.5 cups vegetable broth
  2. 1 cup orzo
  3. 1 onion
  4. 4 cloves garlic
  5. 1tsp oil
  6. Pinch of pepper flakes
  7. 1lb zucchini in 1/2in pieces
  8. 3oz asaigo
  9. 2oz arugula
  10. zest and juice of 1 lemon
  • Microwave broth for 3 minutes. Separately, microwave 2-6 for 5 minutes.
  • Place 1-7 in slow cooker on high for 1-2 hours.
  • Mix in 2oz of asaigo and 9-10. To with remaining 1oz asaigo and continue on high for 5 minutes.
