Creamy oyster stew

Serves 2-4

  1. 4 slices bread
  2. 1 garlic
  3. Half an onion
  4. 4tb vermouth
  5. 3/4 cup fish stock
  6. Juice from 12 oysters
  7. Oyster meat
  8. 1 cup cream
  9. 4tb butter
  10. 1/2tb lemon
  11. 1tsp fresh tarragon
  12. Cayenne
  • Toast bread and rub with halved garlic.
  • Garlic and onion 3-4 minutes
  • Vermouth 2 minutes.
  • Fish stock and juice 3-4 minutes.
  • Cream for 5 minutes.
  • 7-12, serve.

  • 1lb chuck
  • 1lb round
  • 2-3tb room temperature duck fat
  • 4tb minced onion
  • 2tsp fresh thyme
  • 1tsp pepper
  • 1tsp fresh rosemary
  • 1/4tsp coriander
  • 1/4tsp fennel
  • pinch of cayenne pepper
  • 1 egg
