Green chili chicken rice

Serves 4

  1. 8 3oz boneless/skinless thighs
  2. 1 onion
  3. 2 poblanos
  4. 3 cloves garlic
  5. 1tsp cumin
  6. 14oz jar green enchilada sauce
  7. 1+1/4 cup chicken broth
  8. 1 cup long grain rice
  9. 1/2 cup fresh cilantro
  • Sear chicken 5 minutes on one side and set aside.
  • Cook onion and poblanos 5 minutes.
  • Cook garlic and cumin 1 minute.
  • Add 6-8 and chicken seared side up, cover and cook for 20 minutes, stirring every 5. Chicken should reach 175.
  • Add cilantro and serve.
