Cream of zucchini soup

Serves 4 main or 8 large first course

  1. 6tb butter
  2. 1/2tsp curry powder
  3. 1 onion
  4. 1.5lb zucchini
  5. 2tb long grain rcie
  6. 1tb fresh basil
  7. 3 cups veggie broth
  8. 1 cup half n’ half
  • Add 1-4 on high for 30 minutes
  • Add 5-7 on low for 5-6 hours.
  • Puree, add s&p and half n’ half. Serve with croutons
