Cod w/ roasted potato slices

Serves 4

  1. 1.5 russets
  2. 2tb butter
  3. 3 garlic cloves
  4. 1tsp thyme
  5. 4 6-8oz filets cod
  6. 3tb oil
  7. 1tb thyme
  8. 1 sliced lemon
  • Preheat oven to 425. Slice russets and toss in 2-4 and s&p.
  • Arrange in 4 rectangles and cook for 30 minutes, turning halfway through.
  • Season cod w/6-8, place on potatoes and cook for 15 minutes.
